    • Sensations Appearance: pale gold with aniseed-coloured highlights. Nose: delicate, with notes of bergamot and flint. Palate: very fresh on entry, dominated by typical Viognier aromas. On the mid-palate, there is a good balance between the acid tension associated with the terroir of origin and the natural full-bodiedness of the grape variety and its ageing. The finish is savoury and emphasises the rustic and mineral tones.
    • Vinification Manual grape harvest. Vinification by direct pressing of whole bunches. Selection of the best juices from the pressing, light decanting followed by fermentation and finally 8-9 months ageing in previously used large barrels. Undergoes malolactic fermentation and light stirring of the lees (batonnage) during the first months of ageing.

    • Combe Pilate, produced by Maison M. Chapoutier, is a wine belonging to the PGI Collines Rhodaniennes, in the beautiful Rhone Valley. This region is famous for its geological diversity that favours the production of high quality wines. The Collines Rhodaniennes enjoy a moderate continental climate, with hot, dry summers and mild winters, which allow the grapes to ripen slowly and steadily, thus preserving freshness and acidity. 100% Chasselas, a lesser-known but very interesting white grape variety. Probably originating in Switzerland, over time it has also spread to some regions of France. Appreciated for its ability to produce fresh and aromatic wines, it is distinguished by notes of fruit and flowers that faithfully reflect the terroir from which it comes. In this case, the whole bunches are pressed to obtain a must fior fermentation. Maturation on the lees, with stirring of the lees every two months, lasts 8-9 months and adds complexity and body to the wine, without overpowering its fruity and floral aromas. Pale gold in colour with delicate green hues, on the nose the wine reveals a delicate bouquet of white flowers with subtle citric nuances. In the mouth it is fresh and ‘thirst quenching’, with a good balance between acidity and savouriness. Notes of white-fleshed fruit, such as pear and apple, integrate perfectly, giving a nice savoury finish. Perfect with fish and seafood dishes. It goes well with sea bass, scallops and asparagus risotto.
