Hermitage is one of France's most famous wine-growing areas, located on the left bank of the Rhône, where the vineyards stretch out on steep slopes that benefit from optimal exposure. It is from here that De L'Orée, proposed by M. Chapoutier, comes, a white, biodynamic, iconic wine that reflects the essence of the Rhone Valley's winemaking tradition. A pure expression of the Marsanne grape variety, the grapes destined for the production of De L'Orée come from the ‘Les Murets’ parcel, characterised by very old alluvial soils. This unique soil, rich in pebbles and coarse sand, provides excellent drainage and contributes to the concentration and aromatic complexity of the Marsanne grapes. De L'Orée is made exclusively from grapes from old vines, up to 60-70 years old. Mature vines, with naturally low yields, produce small but high-quality clusters, concentrating aromas and flavours. Harvested by hand, the grapes are gently pressed and the must is decanted cold for about 24 hours. This allows natural clarification and preserves the purity of the aromas. Afterwards, approximately 50% of the wine is fermented in large 600-litre wooden barrels, with regular bâtonnage to enrich the texture and add complexity. The remainder is vinified in steel tanks to maintain freshness. Ageing on the lees lasts between 10 and 12 months, during which the wine is regularly tasted to monitor its evolution and ensure its perfect balance. In the glass it presents itself with a luminous golden hue. The nose immediately reveals intense aromas of ripe yellow fruit, followed by delicate notes of toasted hazelnut and a hint of caramel. In the mouth it is full and enveloping, with a creamy texture and freshness well balanced by vibrant acidity. De L'Orée, like many of the labels from the M. Chapoutier, can be stored for decades. It pairs beautifully with foie gras, lobster, fish and white meats. But also goat and blue cheeses.
