  • Sensations The bouquet is very intense and persistent, with hints of apricot and apple, with final notes of chamomile and in some vintages is even spicy. In the mouth, the wine is savoury, well-structured and harmonious.
  • Vinification The grapes are harvested in small perforated crates weighing about 20 kg and stored overnight, until pressing the next morning, in a cold room at a temperature of 0 - 2° C. The vinification process followed is very special, because the concept of maceration between the skin and the must is also applied to a white wine. In this way we obtain an enrichment of the wine in terms of aromas and structure, with the guarantee of excellent longevity. All processes from grape harvesting to maceration are carried out cold to avoid extracting too much colouring matter, hence the name cryomaceration. For subsequent operations, the wine rests exclusively in steel tanks and is bottled in March.

  • The pleasure of a beautifully complex white wine, the result of meticulous selection in the vineyard and careful processing in the cellar. All this is Anterisio, Roero Arneis DOCG proposed here by Cascina Chicco. After careful evaluation to establish the perfect moment for harvesting, the grapes are collected in small perforated crates weighing about 20 kg and stored overnight, until crushing the next morning, in a cold cell. Vinification begins with a pellicular maceration phase, to obtain a wine richer in terms of aroma and structure, while at the same time guaranteeing greater longevity. Maturation in steel tanks and bottling in March following the harvest. The result is a fabulous white characterised by a particularly brilliant colour. Intense and persistent aromas, reminiscent of apricot and apple, with hints of chamomile and sometimes even a hint of spices. In the mouth, it is savoury and well-structured. Perfect alongside appetisers and fish-based first courses and with delicate risottos.

     

    'We have chosen to make wine from the territory'. With these words Enrico and Marco Faccenda, the current owners of Cascina Chicco, welcome visitors to their website. A clear message that leaves no room for misunderstanding. The company's debut dates back to 1950, the year in which Ernesto Faccenda bought the first hectare of land a few steps from Canale, in the heart of the Roero. He was a charcuterie maker by profession but had already sensed the potential of viticulture in the heart of Piedmont. Thus was born the first family production of Nebbiolo and Barbera d'Alba, which was sold in demijohns or as bulk wine. Then, in 1970, the company passed into the hands of Federico Faccenda, Ernesto's son, who gave further impetus to his father's business, starting to bottle under the family name. The baton was picked up, years later, by his sons, Enrico and Marco, who in the early 2000s gave life to one of the first Nebbiolo Metodo Classico vinifications. It is therefore clear that, without losing sight of traditions, the family's gaze is always turned forward, towards ever more ambitious horizons and challenges. Today Cascina Chicco is a modern winery, with open markets in different parts of the world, and about 40 hectares of its own vineyards in the most vocated areas of the Roero. Since 2006, Cascina Chicco also directly manages 8 hectares in the municipality of Monforte d'Alba.
