Sicily, an enchanting island at the centre of the Mediterranean, is a land of contrasts and extraordinary beauty. Le Casematte is located in one of the most evocative areas of the region, where the sea meets the mountains, creating a unique microclimate. The estate's vineyards extend over hillsides that enjoy sea breezes and abundant sunshine, ideal conditions for viticulture. Here the soil is rich in minerals, with a composition that favours the growth of grapes with intense flavours and distinctive characteristics. Sicilia DOC Bianco Peloro is a blend of two indigenous grape varieties: Grillo (65%) and Caricante (35%). Grillo, known for its hardiness and aromatic notes of citrus and tropical fruit, combines perfectly with Caricante, a grape that gives freshness and a distinct minerality to the wine. Together, these grapes create a perfect balance of aromas, acidity and structure. After the grapes are harvested by hand, the bunches are protected from the heat with dry ice to keep the temperature low and preserve the aromas during the subsequent fermentation. The wine then remains on the fine lees until January, allowing aromatic complexity and richer structure to develop. This is followed by blending of the different batches and maturation in stainless steel tanks. Finally, the wine matures in the bottle for three months, thus reaching its full expression. In the glass, it has a luminous straw-yellow colour. The bouquet is refined and persistent, with iodized mineral notes that blend with aromas of white and yellow-fleshed fruit, such as peach and apricot. Delicate floral nuances of mimosa and chamomile are accompanied by fresh notes of Mediterranean herbs, such as rosemary and thyme. In the mouth it is fresh and savoury, with a vibrant acidity that enhances the richness of the fruit. The finish is long and tonic, enhanced by a lively citrus note that leaves a pleasant sensation of freshness.
The Le Casematte winery owes its name to the presence of three casemates, small forts used as sentry shelters, dating back to the First and Second World Wars, placed there to defend the territory. These are located in the largest vineyard plot. The company has a strong territorial identity, being located in the hills north of the city of Messina. Today it has a vineyard of about 11 hectares, cultivated with the main Sicilian varieties such as Nerello Mascalese, Nerello Cappuccio, Nocera and Nero d'Avola.
