Cottanera's Etna Bianco DOC is a fresh and elegant white wine made from 100% Carricante grapes grown in Castiglione di Sicilia, on the slopes of the volcano Etna. This is a white grape variety native to Etna, which has found its ideal habitat in this volcanic area. Carricante prefers cool climates and complex soils, just like those on Etna, where it can fully develop its unique characteristics, giving Cottanera's Etna Bianco floral and citrus aromas and a distinct minerality. The grapes are harvested manually in boxes, to preserve their integrity, and are immediately transported to the cellar. Here, a cold maceration of about 24 hours initially takes place, to extract the most delicate aromas from the grapes. This is followed by fermentation, in temperature-controlled stainless steel, for about 20-25 days. Immediately afterwards, the wine matures in steel on the lees for about 6 months, giving it greater complexity and harmony. This Etna Bianco DOC presents itself to the eye with a brilliant straw yellow colour and greenish reflections. The nose is broad and complex, characterised by intense citrus notes of lemon and citron, and floral hints of orange blossom and jasmine. To these are added pleasant mineral notes, reminiscent of the volcanic nature of the area. In the mouth, the wine is fresh, savoury and mineral, with a pleasant acidity that gives balance and persistence. From aperitifs to fish first courses.
