A fresh white from the heart of Sicily. This is Sant'Anselmo Terre Siciliane IGT Catarratto. It comes from grapes cultivated by the winery on the hills of San Cipirello, in the province of Palermo. Catarratto is one of the island's oldest and most widespread indigenous grape varieties. Resistant and generous, it adapts perfectly to the calcareous soils and hot Sicilian days, yielding wines with outstanding organoleptic characteristics. In the winery, the production process begins with the pressing of the grapes, followed by static decantation of the must. Primary fermentation takes place at a controlled temperature, to preserve the freshness and aromaticity of the initial fruit. Once fermentation is complete, the wine remains in steel on the fine lees until the end of October, enriching itself with complexity and structure before being bottled. Straw yellow in colour with slight golden reflections, the nose reveals a delicate and enveloping bouquet, with hints of exotic fruits and white figs that give a pleasant sensation of lightness and freshness. In the mouth, however, it surprises with its perfect balance of acidity and freshness, with a lively note that enhances its drinkability, making it pleasantly refreshing. A fresh and light white wine, it is perfect with fish dishes such as seafood salads, fish carpaccio and shellfish. It also pairs well with vegetarian dishes, fresh cheeses and light appetisers.
