    "Sant'Anselmo" Grillo Sicilia DOC 2023
  • Sicily DOC Grillo, this Sant'Anselmo from Tenute dello Jato was born in the heart of Sicily, and more precisely in San Cipirello, a small municipality located in the province of Palermo. This area, rich in history and tradition, enjoys a Mediterranean climate, characterised by hot, dry summers and mild winters, creating ideal conditions for growing grapes. The soil in this area is predominantly calcareous-clayey and guarantees good drainage and an optimal water reserve for the plants even in the hottest seasons. The absolute protagonist here is Grillo, an indigenous Sicilian grape known for its ability to best express the characteristics of the terroir. Thanks to their thick skin and resistance to heat, these grapes are ideal for producing fresh and aromatic wines. After harvesting, the grapes are gently pressed to obtain the must, which is then statically decanted and sent to primary fermentation in steel. This is followed by a maturation phase, again in steel, in contact with its fine lees until the end of October. Finally, the wine is bottled, ready to be marketed. Brilliant straw yellow in colour, a clear indication of its freshness, the nose reveals notes of almond and a delicate floral scent. In the mouth, it is fresh, lively and balanced, with a pleasant finish that reveals a distinct minerality. And it is this delicate balance between freshness and minerality that makes the wine particularly pleasant and versatile. Perfect with white meats and fish dishes, this Grillo goes beautifully with seafood salads, shellfish and sushi.
