Angimbè is a blend of 70% Insolia and the remaining part Chardonnay. Insolia, a native Sicilian grape, gives the wine aromas of white fruit and citrus, as well as good acidity. The Chardonnay, on the other hand, contributes structure, aromatic complexity and notes of exotic fruit. Angimbè has an intense straw yellow colour. The nose reveals an intense bouquet, with notes of golden apple, white peach, citrus fruits and delicate vegetal notes. In the mouth it is full, structured and very balanced, characterised by a freshness that delineates its body and a finish of good persistence. The vineyards from which it comes are located at 700 metres above sea level, in a hilly area characterised by clayey soils. It is precisely this altitude that gives the wine its particular freshness and beautiful minerality. The vinification of Angimbè is a meticulous process that begins with the manual harvesting of the grapes: Chardonnay in August and Insolia in September. After cold maceration, the grapes are gently pressed and the must is decanted, also in a cold state. Fermentation takes place in steel tanks, where it then matures, in contact with its fine lees, for 4 months. Designed to be appreciated in its youth, when its freshness and aromas are at their maximum expression, Angimbè is perfect as an aperitif or to accompany a fish menu.
