On the palate it is fresh and savoury, elegant, characterised by an aftertaste that recalls lovely notes of yellow melon and spices.
    • Vinification Cold maceration of the skins for 5 hours at 14°C, pneumatic pressing, nitrogen saturation, cold decantation, fermentation at 18°-20°C, ageing in steel on the fine lees for 4 months and subsequent refinement in the bottle.

    • Sicily, land of sun, sea and wind. A veritable mosaic of unique microclimates and terroirs. Cusumano's Grillo Shamaris is grown in a hilly area 400 metres above sea level, where the Mediterranean climate offers hot summers and mild winters, perfect for growing high quality grapes. The soil, rich in minerals and well-drained, contributes to giving the wine an extraordinary freshness and complexity. Grillo is known for its versatility and ability to maintain freshness despite the warm climate. In this case, the grapes, grown at an altitude of 400 metres, benefit from temperature variations that preserve acidity and aroma, resulting in a vibrant wine rich in nuances. The vinification process begins with a short cold maceration of the skins for 5 hours at 14°C. The grapes are then gently pressed and undergo a temperature-controlled fermentation that preserves the primary aromas of the grape variety. The wine then remains in steel on the fine lees for 4 months, acquiring structure and complexity, and is then aged in the bottle before being released onto the market. In the glass it has a brilliant straw yellow colour. On the nose it is a triumph of aromas: white spring flowers, jasmine, yellow melon, apple, almond and thyme that blend together in an elegant and inviting bouquet. In the mouth it is fresh, sapid and enveloping, with an aftertaste reminiscent of yellow melon and delicate spices. A wine that conquers for its immediacy and depth. Perfect as an aperitif, Shamaris pairs beautifully with fish dishes, from seafood crudités to grilled fish, as well as more elaborate recipes such as risotto with scampi or linguine with seafood.
