A young and fresh white wine that comes from the selection of the best vineyards of Capo Faro and Porri. Here, night breezes manage to create precious temperature excursions that uniquely enrich the organoleptic profile of the grapes. The result is a unique aromatic intensity, but also great elegance and softness on the palate. Secca del Capo, IGP Salina, is the result of a pure vinification of Malvasia grapes, grown on volcanic soils, rich in minerals. Harvesting begins between the end of August and the first ten days of September. The freshly harvested grapes are taken to the cellar to be gently pressed and undergo a delicate cryo-maceration phase. The must thus obtained is subjected to static clarification and fermented at a controlled temperature until all residual sugars are almost completely transformed. The wine is then stored in steel tanks for the subsequent ageing phase before meeting the bottle. Straw yellow in colour, with golden highlights, the nose reveals a pleasantly floral bouquet, with notes of exotic fruit and citrus fruits. In the mouth it is fresh and harmonious, elegantly soft and pleasantly long. Excellent as an aperitif, this fragrant white wine satisfactorily accompanies delicate seafood and shellfish dishes. Excellent with Sushi.
For more than 40 years, the Colosi family has been cultivating vineyards in suggestive terraces on the sea of Salina, the small island of the Aeolian archipelago, a land highly suited to the cultivation of vines. 10 hectares between Capo Faro and Porri, an area considered among the best, both for exposure and the nature of the soil. Vineyards on old terraces, obtained by restoring old dry-stone walls, where the island's typical varieties are grown, from Corinto Nero, Nerello Cappuccio, Nerello Mascalese, Inzolia, to Catarratto and Malvasia. The latter, in particular, represents the main grape variety in the entire wine production of the area and of the Colosi company. Moreover, the production focuses only on indigenous varieties, from the archipelago but also from the Sicilian territory, thanks to 20-year collaboration contracts with selected Sicilian producers.
