When a wine, as in this case, comes from an enchanting land and from healthy, fragrant grapes, there is no need for artifice in the cellar to obtain a good result. It is enough to work, as the technicians of the Colosi family teach us, with skill and attention. At the base of this Salina Bianco, for example, there are Inzolia and Catarratto in equal parts, harvested by hand during the second ten days of September. This is followed by a simple and traditional vinification process, with strict temperature control to best preserve the most delicate aromas of the original grapes. Refinement, on the other hand, is carried out in steel tanks, always temperature-controlled, for a short period. Thus we discover a wine characterised by a beautiful straw yellow colour, with greenish reflections. On the nose, ripe fruit, especially peach and apricot, followed by hints of fragrant flowers. The same pleasantly fresh picture also in the mouth, where one discovers a wine characterised by a nice sapidity and a decidedly fruity finish.
For over 40 years, the Colosi family has been cultivating vineyards on charming terraces overlooking the sea of Salina, the small island of the Aeolian archipelago, a land highly suited to the cultivation of vines. 10 hectares between Capo Faro and Porri, one of the areas considered among the best, both for exposure and for the nature of the soil. Vineyards on old terraces, obtained by restoring old dry-stone walls, where the typical varieties of the island are grown, from Corinto Nero, Nerello Cappuccio, Nerello Mascalese, Inzolia, Catarratto and Malvasia. Malvasia, in particular, is the main grape variety in the entire wine production of the territory and of the Colosi company. Colosi's production is centred on indigenous grapes from the archipelago but also from Sicily, thanks to twenty-year collaboration contracts with selected Sicilian producers.
