  • Sensations Enveloping, fresh and flavoursome characterised by marked minerality and persistence. Aroma: white fruits and hints of citrus fruits and Mediterranean herbs.
  • Vinification After pressing, the white must is statically decanted and started towards primary fermentation under strict thermodynamic control (14 to 18°C). The transformation of the must into wine continues in steel, on the fine lees, until the end of October. The wine is then bottled.

  • This wine originates in a unique territory, the slopes of Mount Etna. The majestic active volcano in eastern Sicily is today considered one of the most suitable locations for quality viticulture. Situated about 800 metres above sea level, the Tenuta dello Jato vineyard enjoys a special microclimate, characterised by significant temperature excursions between day and night. This climate, together with the mineral-rich volcanic soil, gives the grapes a distinctive aromatic complexity and minerality. The combination of lava soil and high altitude creates a perfect environment for viticulture, favouring the slow and uniform ripening of the grapes and contributing to the production of wines of great structure and finesse. Carricante, an indigenous grape of eastern Sicily, is known for its ability to produce white wines of great elegance and longevity. Cultivated since time immemorial on the slopes of Mount Etna, this grape variety is perfectly adapted to the climatic conditions and volcanic soil of the area. Thanks to their natural acidity and marked minerality, these grapes produce fresh, structured wines with a complex aromatic profile and a good capacity for ageing. Vinified in steel and left to age for several months in contact with its fine lees, this Carricante from Tenute dello Jato presents itself in the glass with a beautiful, brilliant straw yellow colour. On the nose, it reveals a complex bouquet with notes of white fruits, citrus fruits and Mediterranean herbs that together recall the scents of the Sicilian maquis. In the mouth it is enveloping, fresh. Characterised by a distinct minerality and a long persistence, the structure of Carricante clearly emerges in this Sicilian white. Versatile on the table, it goes well as an aperitif and is perfect with white meats and fish dishes. Excellent with seafood salads, shellfish and sushi.
