A legendary and mythical wine, fruit of an ancestral and fascinating territory. Son of the volcano, this intense white wine comes from the pure processing of an indigenous grape variety, Carricante, which in this case acquires a very special character. Etna DOC Bianco, the grapes used in this case come from the northern slope of the volcano, the coolest and least subject to excessive sunlight during the summer. The vineyard is located at an altitude of around 650 metres above sea level and enjoys a beneficial temperature range between day and night, which prolongs the ripening phase and allows the grapes to develop their most delicate aromas. Harvesting generally takes place in October and is done by hand, with the bunches placed in boxes. The particularly low yields make it possible to obtain an excellent raw material from which the vinification and maturation process begins in steel vats at a controlled temperature. After fermentation, the wine is matured on its fine lees to expand its bouquet and structure. A wine of great personality, this Etnean Carricante has what it takes to stand up to combinations with intensely flavoured dishes. Try it, for example, with some traditional Sicilian dishes, such as "beccaficu" sardines. It is also perfect with classic grilled fish, cold meats and cheeses that are not too mature.
Cantine Patrì has roots as solid as its vineyards. The company was founded in 1936, in the territory of Butera, by Rocco Paterna, who was succeeded, years later, by his son-in-law Giuseppe Patrì and later by his son Rocco. The latter, with his wife Patrizia and children Giuseppe, Elisa and Daniela, decided to enhance the extraordinary wine heritage of his land, devoting a third of the 250 hectares of property to the production of wine. Today Cantine Patrì produces wines in the Riesi, Etna and Sicily DOCGs, as well as the prestigious Cerasuolo di Vittoria DOCG. The winery is located in the hilly inland area of the province of Caltanissetta, in central southern Sicily, characterised by mild temperatures, abundant sunshine and a period of drought generally concentrated between June and August. Soils composed of clayey and calcareous rocks allow the winery to produce wines of great structure, with compact, deep colours and great longevity. The varieties represented are those typical of the region, namely Nero d'Avola, Frappato, Syrah, Catarratto, Insolia, Grillo and Zibibbo. The company is also committed to environmental protection and the safeguarding of specific characteristics.
