A wine that celebrates the encounter between the Mediterranean and the world, telling the dream of Ludovico, President of the Orestiadi Foundation. It does so thanks to the union between Catarratto, the emblem of Sicilian whites, and Chardonnay, among the best-known varietals cultivated in all the wine-growing areas of the planet. White, like the hat Ludovico used to wear. A wine to be discovered that comes from vineyards rooted in a particular Terra Nera, typical of the Trapani hinterland, rich in clayey-silt substances, compact and drought-resistant. Thanks to these characteristics, Terra Nera is ideal for the cultivation of numerous vine varieties. After an initial cryomaceration phase, the grapes are softly pressed, followed by fermentation by spontaneous yeasts. Only at this point do Cataratto and Chardonnay meet, in the final blend. This is followed by approximately 6 months of maturation on the lees and 6 months in which half of the product matures in French oak tonneaux. Once the two parts are combined, the wine spends a further 6 months in steel sur lies and at least 4 months in the bottle. A long journey necessary to reach the right maturity. This reveals a wine characterised by a beautiful, bright yellow colour with greenish reflections. On the nose, white-fleshed fruit such as plum, apple and pineapple, as well as hints of flint. In the mouth, however, it is pleasantly round and complex. Finely mineral and pleasantly fresh. For lovers of terroir pairings, this white is simply perfect with the most Mediterranean of dishes, fish couscous.
