Fiano and Malvasia come from vineyards that enjoy ideal conditions, with medium-textured clay soils and a warm, Mediterranean climate, mitigated just enough by sea breezes. After the harvest, which is carried out at different times for the two varieties (Fiano at the end of August, Malvasia at the beginning of September), vinification involves cold pre-fermentation maceration and temperature-controlled fermentation in steel. The wine then matures on the fine lees for a few months, completing its evolution process. Straw yellow colour with golden hues. On the nose, Sale is an explosion of fruity aromas of mango, melon and peach. Then hints of white flowers and almond notes. In the mouth, it is fresh and savoury, with a nice structure and a persistent finish. Excellent as an aperitif, it goes well with raw fish starters and fresh cheeses.
