      "Vespre" Fiano Salento IGT 2023
    • Pure Fiano. As usual for Schola Sarmenti, at the centre of everything there is the enhancement of the immense heritage of indigenous Salento grape varieties. Vinified in a simple but accurate way, without resorting to the use of wood but enhancing all the goodness of the fruit with a careful processing and a careful control of temperature. To produce this white wine, the process begins with a careful selection of the best bunches of grapes, picked by hand and delicately placed in small ventilated boxes to preserve their integrity. Then, once in the cellar, the grapes are further selected on a modern sorting table and sent for vinification. Intense straw yellow in colour, it is easy to recognize the typical notes of the varietal on the nose. From acacia flowers to the ever-present aroma of roasted hazelnuts. In the mouth, however, it reveals itself to be a pleasantly fresh wine, with hints of mineral notes and a savoury and pleasantly long finish. Perfect for a traditional combination with a seafood appetizer or a tasty first course like spaghetti with tomato sauce. But it has the makings of something even more daring. For the more daring, the out-of-the-box pairing is with a nice white meat main course.
