We are in the area of Brindisi, the heart of Salento, in Puglia. We are located at an altitude of about 100 metres, in an area characterized by a mild microclimate due to the proximity of the sea. Here the Vermentino ripens to perfection, giving life to clusters endowed with a beautiful sheen. After harvesting, the destemmed grapes are kept in contact with the skins for a few minutes before pressing. In this way all their aromatic potential is extracted. Fermentation and refinement are carried out in steel containers at a controlled temperature. A white that in the glass is a beautiful straw yellow colour with greenish reflections. On the nose the scents are delicate and reminiscent of white flowers, citrus and Mediterranean scrub. In the mouth, however, are the scents of thyme and rosemary to recall the pleasant sensations perceived previously.
