It is hard to imagine a more territorial white than this Terre Siciliane IGP. It is called Mar'è and is one of the good products offered by Cantina Colosi. It comes from the processing of two indigenous grape varieties of the island, Inzolia and Catarratto, used in equal parts, complementing each other. The grapes come from the estate's vineyards in the area of Sciacca, in the province of Agrigento, and Salemi, in the Trapani area. Here the soils are clayey and the grapes reach perfect ripeness, enjoying the warm sunshine and Mediterranean climate of the island. Harvesting takes place in the second ten days of September. The grapes are immediately crushed to maintain fragrance and aroma. Then the must is fermented in stainless steel tanks at a controlled temperature for about two weeks, and in any case until the sugars are completely transformed into alcohol. At the end of fermentation, the wine stays in stainless steel tanks for about 3 months for the maturing phase. The wine is then bottled and left to rest for at least another two months before being released for sale. Intense straw yellow in colour with greenish highlights, the nose reveals a wine characterised by a bouquet of white flowers and yellow-fleshed fruit, followed by notes of green tea. In the mouth, however, the wine is surprisingly fresh, savoury and fruity. Endowed with excellent persistence, it has a good balance between softness and acidity. Ideal as an aperitif, it also goes well with fish dishes, risottos and seafood.
For more than 40 years, the Colosi family has been cultivating vineyards in suggestive terraces on the sea of Salina, the small island of the Aeolian archipelago, a land highly suited to the cultivation of vines. 10 hectares between Capo Faro and Porri, an area considered among the best, both for exposure and the nature of the soil. Vineyards on old terraces, obtained by restoring old dry-stone walls, where the island's typical varieties are grown, from Corinto Nero, Nerello Cappuccio, Nerello Mascalese, Inzolia, to Catarratto and Malvasia. The latter, in particular, represents the main grape variety in the entire wine production of the area and of the Colosi company. Moreover, the production focuses only on indigenous varieties, from the archipelago but also from the Sicilian territory, thanks to 20-year collaboration contracts with selected Sicilian producers.
