Freshness and minerality. This wine comes from a successful blend of typical Tuscan grapes. It is called Casamatta Bianco, is a Toscana IGT and is produced by Bibi Graetz. A perfect synthesis of freshness, minerality and complexity. Vermentino, Trebbiano and Ansonica are the grapes from which it is made. They all come from vineyards located at an altitude of approximately 450 metres on marl-rich, skeleton-rich soils. Each variety brings its own unique characteristics to the wine. Vermentino, in particular, gives freshness and minerality, Trebbiano structure and aromaticity, Ansonica elegance and sapidity. Harvested by hand in boxes, after destemming and soft pressing with dry ice, the must ferments at low temperatures in steel tanks for about two weeks, preserving the freshness and aromaticity of the grapes. The result? Brilliant straw yellow colour, on the nose notes of orange blossom, peach and citrus fruits. Then hints of pear and exotic fruit. In the mouth, the wine is dominated by a nice acidity that gives freshness and liveliness. Fruity and floral sensations combine with hints of sea breeze, creating a perfect balance between freshness and minerality. To be enjoyed with fish dishes, shellfish and vegetables.
