The mineral character of the wine is suggested by notes of rosemary and thyme, as well as saline freshness. The body is light and elegant, with a crisp and mineral palate. The delicate structure is also characterised by hints of lime, pear, grapefruit, quince and yellow apple. The persistent finish, combined with a bitter note of fresh almond, is typical of a classic Vermentino di Maremma.

As little intervention as possible, both in the vineyard and in the cellar, to make the most of the starting fruit. And so, in the vineyard, the vines are managed using biodynamic practices, and in the cellar, all the processing phases are under the banner of simplicity and cleanliness. Fermentation and ageing, in particular, take place in cement and steel, and during the entire production process, no products derived from animals are used. It is therefore a vegan friendly wine. Good in the glass, which does not harm the environment or even animals. What more could you ask for? Let's put it to the test with a classic seafood starter.       His name is Giuseppe 'Pepito' Castiglioni, an industrial entrepreneur and lifelong wine lover. In 1974, driven more by passion than anything else, he bought a hectare of vineyard in Chianti. Thus began the story of Querciabella, which, in the space of a few years, grew exponentially, extending as far as the Maremma. The goal, of course, is high quality. After all, the models inspired are the elegant wines of Bordeaux and Burgundy. Querciabella, however, immediately has an extra gear. In fact, thanks to Pepito's son Sebastiano Cossia Castiglioni, a long process of conversion to organic viticulture began immediately. It was 1988 and Querciabella was one of the first companies in Italy to adopt this practice. Today, almost 50 years later, Querciabella is considered one of the most innovative realities in Italy. Today, the company can count on a total of over 100 hectares in Chianti Classico and 32 in Maremma. The vineyards, rich in biodiversity, have altitudes ranging from 300 to 600 metres.
