White yes... but 100% Tuscan. The beautiful Castelsina winery proposes it here, a Bianco Toscana IGT that perfectly reflects the purity and freshness of the Tuscan countryside. A fortunate synthesis of tradition and modernity. But let us proceed with order. The blend in this case is composed of a generous portion of Tuscan Trebbiano, which alone accounts for about 40% of the total. This is the solid base on which Malvasia (30%), fresh and pleasantly aromatic, and Vermentino (30%), with its delicate acidic backbone that lends freshness to the finished wine, are happily grafted. After the harvest, the grapes arrive in the cellar to be soon destemmed and sent to a soft pressing, preserving the natural freshness of the must. At that point, after a short rest for a few hours at a low temperature to allow natural sedimentation, the must is racked into steel tanks for the fermentation phase, which always takes place at a controlled temperature. After about 10 days, the wine is racked again to remove any sediment and we move on to the final stage, i.e. ageing, again in steel tanks. In the glass, this Castelsina Bianco has a brilliant, straw-yellow colour. The nose reveals a clean and distinct aromatic profile, characterised by delicate notes of citrus and yellow fruit. In the mouth, however, it is surprisingly fluid and smooth, with a slightly oily sensation that nicely balances the fresh, floral finish. Ideal as an aperitif, this white goes perfectly with fish dishes.
Castelsina represents a wine culture that is both innovative and respectful of Tuscan tradition. Cantina Cooperativa, founded in 1971, brings together around 250 winegrowers whose vineyards cover an area of around 400 hectares in the provinces of Siena and Arezzo.
