It is called Occhione and is a Toscana IGT proposed here by Campo di Sasso. A white wine obtained mainly from Vermentino grapes, with a small percentage of Viognier. All the vineyards, in this case, are located near the sea. And it is precisely its presence that exerts a strong influence on the grapes. The soil, a mixture of clay and sand, then favours the expression of the qualities of Vermentino. Vinification begins with the manual harvesting of the grapes. Once in the cellar, the grapes are softly crushed and destemmed. The must obtained is then transferred to stainless steel tanks, where fermentation begins at a controlled temperature. After processing, the wine rests for about 5 months before being sent for bottling. In the glass it has a beautiful bright straw yellow colour. On the nose, mineral, citrus and white flower notes stand out. In the mouth, Occhione is fresh and pleasant. Harmonious, with a pleasantly savoury finish. Perfect as an aperitif, it is a fresh white wine that goes well with meat and fish hors d'oeuvres and white meat main courses.
