    • Vinification Vinification: the whole bunches are subjected to gentle pressing with separation of the clear must from the more cloudy one, followed by static decantation for about 24 hours at 14 °C, which serves to clarify the must as best as possible. The subsequent alcoholic fermentation in reduction at a temperature of 15 °C for 20 days is very slow. Maturation: from October to April, bâtonnage on noble lees takes place to bring out the very complex aromatic profile of the vine to the full. Ageing continues in the bottle for at least 3 months before release.

      "Monghisio" Piemonte DOC Sauvignon 2021
    • A structured and aromatic white, this pure Sauvignon is offered by the historic Vinchio Vaglio winery. We are in the heart of the Asti Langa, where a group of passionate winemakers manage their vineyards with skill and ability. The processing of this wine begins with the whole bunches, subjected to soft pressing. After separation of the clearer liquid, this is poured into steel tanks for the alcoholic fermentation phase, in this case in reduction, i.e. in an oxygen-free environment. At the end of this phase, the wine remains in contact with its yeasts for several months. Frequent bâtonnage operations allow the complex aromatic profile of this vine to be brought out to the full. After bottling, the wine matures for at least another 3 months before release. Straw yellow in colour with greenish reflections, the nose reveals fine and intense aromas, typical of the vine, with notes of citrus and mango fruit, pineapple. In the mouth, then, it is well balanced, between freshness, roundness and structure. A versatile white, this Sauvignon 'Made in Piedmont' can be served with both cured meats and white meats. Try it also with the typical Piedmontese Finanziera and with medium-aged cheeses.

      In 1959, the year of its foundation, there were only 19. Today, the members of the Cantina Cooperativa Vinchio e Vaglio Serra number almost 200. In total, they manage around 450 hectares of vineyards with care and passion. In particular Barbera, the so-called 'Rubino di Vinchio', but also other typical local varieties, such as Dolcetto, Cortese, Grignolino, Nebbiolo, Brachetto, Moscato, Freisa and Bonarda. In addition to this dense group of autochthonous, i.e. typical local varieties, there are also international varieties that are best suited to the Piedmont hills, such as Pinot Noir, Chardonnay, Sauvignon and Viognier. The vineyards, mostly on very steep slopes, make the work particularly demanding but, at the same time, guarantee optimal exposures that result in perfect ripening. The quality of the harvested grapes is, of course, also helped by the nature of the soils, whose mineral components guarantee the production of high quality wines. The wine cellar, on the other hand, is equipped with state-of-the-art equipment and modern winemaking facilities, and also has a large barrique cellar, built into the hillside, which guarantees constant and natural temperature and humidity. Here there are French oak barriques and barrels of various capacities, where the wines can age slowly. For as long as necessary.
