  • Vinification The grapes harvested by hand in September are destemmed and gently pressed. After soft pressing, the flower must is fermented in French oak barrels of first and second passage. Before bottling, the wine matures for about 12 months on the fine lees in stainless steel tanks.

  • History, tradition and oenological passion. All this, and much more, can be found in a glass of Cantina Ratti's Piedmont DOC Sauvignon ‘I Cedri’. Its evocative name pays homage to the imposing cedars of Lebanon that stand near Villa Pattono, opposite the vineyards that produce the grapes for this Sauvignon, in a setting of rare beauty and history. Ratti's Piedmont DOC Sauvignon comes from a small vineyard of less than one hectare, where, thanks to special climatic and environmental conditions, the Sauvignon Blanc grape is able to express itself at its best, giving the wine freshness and complexity. Sauvignon Blanc, of French origin, is famous for its fresh and aromatic characteristics. Cantina Ratti has chosen to cultivate this variety alongside the traditional grape varieties of the region, making this Piedmont DOC Sauvignon the first white wine of their production. The grapes are harvested by hand in September, selecting only the best bunches. After gentle destemming and pressing, the must is transferred to steel containers where fermentation takes place at a controlled temperature. During the ageing phase, the wine remains in steel for over a year, with regular bâtonnage, giving the wine body and complexity. Finally, before reaching the market, the wine continues its maturation in the bottle. Straw yellow in colour, with greenish reflections denoting freshness, the nose of this wine is intense and delicate, with hints of white peach, grapefruit and a hint of green tomato leaf. In the mouth, it is savoury and full-bodied, with a nice complexity that makes it pleasant to enjoy even after several years of ageing. A surprisingly versatile Sauvignon, it goes well with a wide variety of dishes. Perfect with starters, light first courses, fish and white meat dishes. It also goes well with fresh cheeses and vegetarian dishes.

    Renato Ratti's name is inextricably linked to the evolution and establishment of modern Barolo. It was his idea to introduce the concept of Cru in the Langhe. With these words one is greeted on the website of the beautiful winery in La Morra, one of the best known and best loved in the Langhe. The company was founded in 1965, when Renato bought the first vineyard for the production of Barolo. It is a small vineyard in the historic area of Marcenasco, below the Abbey of the Annunziata at La Morra. In 1969 his nephew Massimo Martinelli, also an oenologist, joined the company, with whom he perfected the technique of vinification, maturation and refinement of Barolo Marcenasco, to obtain elegance, finesse and longevity. The method developed by Ratti is completely innovative for the area. And thanks to his commitment, Renato Ratti became an important reference point for wine in the Langhe, leading him to the position of President of the Barolo Consortium and later Director of the Asti Consortium. Today, Cantina Ratti's vineyards extend over about 50 hectares, divided into 6 estates located in La Morra, Mango and Costigliole d'Asti and Dogliani. The distance between the different plots determines the presence of very different grape varieties, microclimates and soils. It is no coincidence that the winery produces all the classic Langa wines in its modern facility in La Morra.
