Alì Alè is a 'niche' Tuscan passito, since a maximum of 1000 0.375 cl bottles are produced annually. The curious name derives from the union of the two grape varieties that make it up: Alicante and Aleatico. A marriage destined to give life to a high quality product. The idea of creating this passito came from Ezio Mantellassi, founder of Fattoria Mantellassi, who planted the first rows of Aleatico in 1960. It was then oenologist Marco Stefanini, at the suggestion of Aleardo Mantellassi, who proposed vinifying the Alicante and Aleatico grapes together, resulting in this unique wine. The grapes come from hilly vineyards located in the Tuscan Maremma, characterised by tufaceous limestone soil that gives the wine minerality and structure. The healthiest bunches are harvested by hand and left to dry for about 70 days in crates, in a ventilated place protected from the sun. The entire vinification process is painstaking, from the removal of the stalks to the pressing. The wine then matures in small oak barrels for several months. The nose has particularly intense and pleasant aromas of red fruit, with notes of jam, chocolate and spices. In the mouth, however, it is sweet and nuanced, with a persistent and harmonious finish.
