  • Château Roumieu's Sauternes AOC comes from Haut Barsac, one of the most prestigious areas of the Sauternes appellation. We are in the south-west of France, in an area characterised by a very particular microclimate, influenced by the proximity of the Ciron river, which creates morning mists ideal for the development of Botrytis cinerea, the so-called ‘noble rot’. This natural phenomenon concentrates sugars and aromas in the grapes, resulting in sweet wines of extraordinary complexity. Château Roumieu uses a classic blend for its Sauternes: Sémillon for 89% which gives structure and aromatic richness, Sauvignon Blanc (10%) which adds freshness and liveliness thanks to its natural acidity and Muscadelle (1%) which contributes delicate floral notes. The harvest (of course) is strictly manual and requires several passages in the vineyard to carefully select the grapes affected by noble rot. After pressing, the must ferments slowly to maintain the delicate aromas. The wine then matures for at least 18 months in oak barrels in temperature- and humidity-controlled cellars, developing a perfect balance of sweetness, acidity and aromatic complexity. Intense golden yellow, the nose reveals complex aromas of candied tangerine, white flowers and hints of honey. On the palate, it is broad, fine and well-balanced, with a persistence that leaves a pleasant sensation of freshness. Sauternes Château Roumieu can age up to 20 years, developing - with the passage of time - further notes of dried fruit, spices and caramel. For those who don't want to wait, however, it should definitely be served with foie gras (if you like it) or blue cheeses, such as Roquefort, for an irresistible contrast between creaminess and intensity. Excellent with fruit desserts, lemon cakes or almond cakes.
