  • A unique and precious wine born in the heart of the Tuscan hills. This is the Vin Santo del Chianti Classico DOC Occhio di Pernice, proposed here by Azienda Agricola Lanciola. A small amber-coloured oenological gem that encapsulates the history, tradition and passion of a beautiful land. Occhio di Pernice owes its name to its intense amber colour reminiscent of the pupil of a partridge. This wine, sweet and complex at the same time, is made from Sangiovese and Canaiolo grapes, rigorously selected and dried on straw mats for at least four months. This ancient process concentrates sugars and aromas, giving Vin Santo its characteristic richness and complexity. The dried grapes are then gently pressed and the must obtained ferments in oak barrels, where it then rests for at least seven years. During this long ageing, the wine develops its aromatic complexity and its characteristic balanced sweetness. Intense amber in colour with copper highlights, the nose is broad and complex. Notes of dried and candied fruit, apricot, orange peel, citrus fruit, walnut husk and sweet spices. In the mouth it is sweet, soft and opulent, with a crisp acidity that balances the sweetness and lends freshness. The finish is long and persistent, with hints of dried fruit, candied fruit and spices that invite you to take another sip. A meditation wine, it is perfect to end an important meal on a high note. It is ideally paired with desserts such as Tuscan cantucci, fruit tarts and chocolate desserts but is also an excellent companion for mature and blue cheeses.

We are in the 'Colli Fiorentini' area, in the heart of Chianti Classico. We are about 300 metres above sea level and among the rows, in addition to the ever-present Sangiovese, there is also Cabernet Sauvignon, Merlot and Syrah, as well as the indigenous Canaiolo and Colorino.
