Cavit's Vino Santo Arèle is an excellent wine that encompasses the tradition and unique characteristics of the Valle dei Laghi, an area that connects Trento to the northern shore of Lake Garda. This valley is characterised by a unique microclimate, influenced by the ‘Ora del Garda’, a warm and dry wind that blows during the day, and by the cool night breezes coming from the Dolomites. These climatic conditions favour the cultivation of Nosiola, the only native white grape variety of Trentino, from which this fine wine is produced. The production of Vino Santo Trentino has its roots in over 200 years of history, representing a winemaking tradition deeply rooted in the territory. The production process begins with the late harvesting of Nosiola grapes at the end of September. The bunches, selected for their ripeness and sparse structure, are placed on racks called ‘arèle’ and left to dry naturally in well-ventilated fruit cellars, without any forcing. During the 5-6 months of drying, the grapes develop the so-called noble rot, or Botrytis cinerea, which helps to concentrate the sugars and enrich the aromatic profile of the wine. The grapes are then pressed and the must ferments very slowly in small wooden barrels. The wine is then aged for over fifteen years, acquiring an extraordinary complexity and an intense bouquet. A brilliant golden yellow colour, the nose offers an intense and complex bouquet, with hints of dried fruit, in particular almonds and walnuts, accompanied by notes of honey. In the mouth it reveals a perfect balance between body, sweetness and freshness. A wine for meditation, ideal for special occasions and moments of reflection, it can also accompany biscuits and cookies, enhancing the sweet and toasted notes of the dessert. Also suitable with cream-based desserts, its freshness balances the richness of the preparations. For a more daring combination, you can finally try it with aged cheeses. In this case the sweetness of the wine creates a pleasant contrast with the savouriness of the cheese.
