Today we find ourselves in the heart of the Barsac wine region, in Bordeaux. Here Château Nairac, a historic estate known for the production of high quality sweet wines and classified as ‘Deuxième Cru Classé’, cultivates its vineyards on soils composed of sand and gravel, with clay and limestone rocks rich in starfish fossils. This intricate mosaic of elements contributes to the creation of wines with great minerality and complexity. Château Nairac is the result of a successful blend of Sémillon, with small percentages of Sauvignon Blanc and Muscadelle. The harvest is manual and selective: only the bunches affected by noble rot are picked. In the cellar, after a delicate pressing, the must ferments in oak barriques. This is followed by an ageing period of about 30 months in partially new barrels. When tasted, Château Nairac has a brilliant golden yellow colour. On the nose there are intense notes of saffron, honey and citron. In the mouth it is powerful and elegant, with a fresh finish and a remarkably aromatic persistence. Already good today, this wine has an ageing potential of at least 10 years, during which time it develops further aromatic complexity. It goes perfectly with fruit-based desserts, foie gras or blue cheeses.
