It is called Shemale and is one of the good wines offered by Le Moire winery. Produced in the middle Savuto Valley, specifically in Motta Santa Lucia, Calabria, it is listed on the label as DOC Savuto Rosé. Quality native Calabrian grape varieties are used in its production, such as Arvino, Magliocco Dolce and Greco Nero, an irrepressible redemption of the local winemaking tradition. Harvested by hand, slightly earlier than the same grapes destined for the red DOC of the same name. This makes it possible to obtain a rosé characterized by a soft and elegant color. Vinification, then, involves a few hours of contact with the skins, a soft pressing and a slow fermentation that lasts three weeks at low temperature. The only further step in the cellar before bottling is static decantation. Shemale DOC Savuto Rosé in the glass is softly colored, with elegant aromas of strawberries and raspberries. Pleasantly drinkable thanks to the measured savory finish, after the first, it invites another glass. On the table, then, this Calabrian rosé goes easily with hors d'oeuvres of cured meats and fresh cheeses, but also with fish. In short, a wine that can really get everyone to agree.
