Apulia, and in particular Salento, is a land famous throughout the world for the quality of its rosé wines, produced from good local grapes. This is also the case of this Speziale, Negroamaro Rosato Salento IGP proposed by Trullo di Pezza. The grapes, cultivated according to the dictates of organic viticulture, grow in the company's vineyards in Lizzano, in the province of Taranto. The aim is to create a fresh and fragrant rosé, rich in scents and flavours. For this reason, the grapes, harvested when perfectly ripe, are brought early to the winery to be processed. After prior destemming and crushing, the mass is divided into two halves. One part ferments in white. The other undergoes cryo-maceration for 6-8 hours to extract colour and fresh aromas. In the glass it has a beautiful bright coral pink colour. The nose offers a pleasant intensity, with notes of small red berries with delicate flesh, accompanied by a hint of dog rose. On the palate, however, it is enveloping and fresh. Balanced and perfectly consistent with what has been perceived previously. Good for a thousand occasions, this Salento rosé is extremely versatile. It can accompany an entire meal from aperitifs to main courses. Try it with vegetable-filled focaccia, pizza or salami and medium-aged cheeses.
Trullo di Pezza can now count on about 32 hectares of vineyards, distributed in the vicinity of the Torricella winery, as well as in the territories of Maruggio, Lizzano and Manduria. We are in the province of Taranto, in the heart of green Apulia. It is no coincidence that the region's main grape variety, Primitivo, accounts for the largest area of production. But there is also room for Negroamaro, Fiano, Aglianico and Susumaniello. The vines take root in the much-vaunted 'red earth' of Salento, on a plateau dotted with centuries-old olive trees, not far from the sea. Here winters are mild and summers decidedly hot. The vineyard is tended organically, using natural products and, only in cases of extreme drought, emergency irrigation is used. The production heart of Trullo di Pezza is located in the farm of the same name. Here the entire winemaking process takes place outdoors, in an area of two thousand square metres, well harmonised with the surrounding greenery.
