Corerosa is a beautiful rosé that comes from one of the regions best known for producing these intriguing wines. We are in Puglia, and to be precise in Salento. Here Cantina Due Palme vinifies in pink two of the typical vines of the region, the Sussumaniello and the Primitivo. The grapes, harvested when fully ripe, undergo careful selection to prevent less-than-perfect bunches from compromising the quality of the finished wine. The vinification is simple and at the same time accurate. The right pink point is obtained by means of a short contact between must and skins. It is, in other words, what we call in the jargon the wine of a night. A quick refinement in steel tanks follows before bottling. In the glass it has a beautiful bright cherry pink colour. The nose is delicately fruity and floral, with hints of black cherry, cherry and raspberry. In the mouth, however, it is above all savoury, with a distinct acidity that enhances the freshness. A wine to pair with satisfaction with tasty fish dishes.
