    • Sensations Coral red, brilliant, with cherry tones. The nose recalls notes of flowers, with nuances of red fruits; pleasant, crisp and with good freshness on the palate. Fruity and acidulous, balanced and fragrant. Perfect as an aperitif in moments of conviviality, at table it goes well with raw langoustine and red prawns, amberjack carpaccio, tuna sashimi. Exceptional with aubergine parmigiana.
    • Vinification Whole bunches are harvested and conditioned at a temperature of around 15 degrees prior to pressing. Maceration after harvest without stalks takes about 20 hours. The temperature control of the fermenting must is set at 15-16 degrees Celsius. The wine is matured for 3-4 months in steel.

    • Girofle is a fascinating rosé. It is offered by the Salento winery Garofano and well embodies the elegant and refined style of modern Apulian rosés. This Salento IGP Rosé is made from 100% Negroamaro grapes. An indigenous Apulian grape, Negroamaro is known for its ability to express itself in a wide range of wines, ranging from large structured reds to elegant and fresh rosés, like this Girofle. Salento, after all, is a land full of contrasts, where the soil is ideal for growing vines while the climate, hot and dry, with long, windy summers, allows the grapes to reach perfect ripeness. After manual harvesting, the grapes undergo soft pressing to extract only the flower must with the right note of colour. Fermentation takes place at a controlled temperature in steel, preserving the freshness and delicate fruity and floral nuances of the variety. Finally, ageing, also carried out in steel, enhances the freshness characteristics of this rosé. In the Girofle glass, it has a seductive bright coral pink colour. On the nose, it immediately reveals floral notes evoking rose petals and peony, accompanied by pleasant hints of red fruits such as wild strawberries and fresh cherries.
