      "Quota 29" Primitivo Rosé Salento IGT 2023
    • Imagine Salento, a land kissed by the sun and washed by the Adriatic Sea. Here, where the red earth turns pink at sunset, Quota 29, Rosato IGT Salento is born from Primitivo grapes. This indigenous grape variety finds its ideal habitat in Salento. Here, the grapes are cultivated on medium-textured clay soils, on plants with an average age of 15 years. Harvesting is manual and takes place from the fourth week of August. By then the grapes have reached perfect ripeness. In the cellar we start with a cold maceration in the press for 6 hours, which enhances the varietal aromas of the Primitivo and allows the right extraction of colour from the skins. Fermentation takes place in steel at a controlled temperature, preserving the wine's freshness and fragrance. This is followed by an ageing period of 3 months on fine lees, again in steel, to complete the process. In the glass, this rosé has a brilliant cherry pink colour that immediately catches the eye. On the nose, the bouquet is captivating, with floral and mineral scents intertwined with notes of pomegranate, plum, raspberry and Gallic rose. In the mouth, it is structured, velvety and enveloping, with a vibrant acidity that lends freshness and persistence. The finish is long and persistent, with currant aromas that complete the sensory experience. A must-try with raw shellfish, as well as vegetarian dishes or fresh cheeses. Also excellent with not too spicy Asian dishes.
