  • Sensations The bright, intense cerasuolo fades to vivid ruby hues. A basketful of wild strawberries, pomegranates and geraniums gives a seductive sip of fresh, crisp red fruit. Cherry juice wrapped in a delicate mineral note closes the tasting. Structure and depth give a wine of great breadth and depth. Food pairings: stuffed mussels, Bari focaccia, courgette flower pie, tomato and green bean pasta with cacioricotta cheese, seafood risotto, dried legume soups.
  • Vinification The grapes are immediately taken to the cellar and destemmed, then cooled to 10°, then undergo a short maceration in the press for 4/6 hours to extract the aromas from the skins. The flower must is collected for fermentation in stainless steel at 15°. The wine matures for 60 days on the lees before being bottled, where it remains for a further 2 months.

  • A Castel del Monte DOCG, this Augustale Rosato proposed by CRIFO is the winery's jewel in the crown. One of the best expressions, in pink, of an indigenous Apulian grape, Bombino Nero, symbol of the Alta Murgia. This rosé, in fact, was born in the limestone hills surrounding Ruvo di Puglia, an area where viticulture finds fertile ground, thanks to a soil rich in minerals and a climate that, with its temperature swings between day and night, favours optimal ripening of the grapes. For its part, Bombino Nero is a unique grape variety, known for its ability to produce rosé wines of great elegance and freshness. Cultivated using the spurred cordon system, with a density of 4,000 vines per hectare, it produces bunches of excellent quality, thanks also to a low yield per plant. Harvesting takes place in mid-October, when the grapes have reached perfect ripeness, with a good balance between sugars and acids. At that point, the vinification process is carefully supervised to preserve all the freshness and delicacy of Bombino Nero. Maceration in the press, lasting 4-6 hours, is essential to extract the fruity aromas from the skins without overloading the must with colour. Then the flower must, the most valuable, is fermented in temperature-controlled steel tanks. Maturation on the lees for 60 days follows, followed by a further 2 months in the bottle. Intense and luminous cherry colour, fading to bright ruby shades, the nose reveals itself to be rich and inviting, with notes of wild strawberries, pomegranate and geranium, anticipating a fresh and crisp sip of red fruit. In the mouth, it impresses with its balance, lively freshness and pleasant minerality. A full-bodied rosé, it is capable of surprising for its depth and its ability to combine lightness and complexity. Gastronomic pairings range from seafood to land dishes. Try it with stuffed mussels, focaccia barese and seafood risotto. The wine's freshness blends perfectly with the flavour of the dishes, enhancing every mouthful.

    The Cantina di Ruvo di Puglia is a fine example of cooperation that works and brings value to its territory. Its foundation dates back to 1960, when 28 winegrowers decided to unite to improve their bargaining power in the sale of grapes, which were often bought by large national groups. This union marked the beginning of a path of growth and transformation that, over the years, has led the Cooperative to evolve from a simple producer of musts to a winery capable of producing high quality bottled wines. In this journey, 2010 represents a milestone. That year saw the inauguration of a new winemaking facility, designed to process native Apulian varieties. The winery's vineyards cover an area that encompasses the provinces of Bari and Barletta-Andria-Trani, in the heart of Apulia. The proximity of the sea offers an ideal microclimate for viticulture, thanks to the sea breezes that mitigate the high summer temperatures typical of the area. The vineyards are cultivated using various traditional techniques, including the alberello and the Apulian pergola. Among the vines grown are the main indigenous varieties, such as Nero di Troia, Primitivo and Bombino Bianco. The historical name of the cooperative, Cantina della Riforma Fondiaria, is the basis of the acronym CRIFO, by which the Cantina's wines have always been known. Today, the Cantina can count on the cooperation of more than 400 members who guarantee an annual production of more than 8,000 tonnes of grapes.
