An indigenous variety of the Trentino-South Tyrol region, Schiava Gentile has been cultivated here since time immemorial and is mentioned as far back as 1300. A curiosity about the name. The term 'schiava' probably refers to the fact that since ancient times this grape was cultivated 'schiavizzata', i.e. tied to a pole. In this case, Cavit obtains the grapes to produce this delicate rosé from the Bottega Vinai line from Vallagarina, to the right and left of the Adige River, in the foothills surrounding the city of Rovereto. Here the climate is typical, with cold, snowy winters and hot, very hot, but breezy summers with beneficial temperature swings between day and night. Hand-picked and carefully selected grapes, after crushing are vinified in pink at a controlled temperature. This is followed by a short ageing period in stainless steel tanks to preserve freshness and fragrance before bottling. The result is a beautiful wine characterised by a vivid, bright pink colour. The nose is pleasantly fragrant and fruity while the palate reveals a well-dried rosé, with clear notes of raspberry and berries, followed by a delicately bitter finish reminiscent of almonds. An extremely versatile wine, it goes well with simple and tasty aperitifs but also with first courses and fish soups. Also excellent with classic rabbit alla cacciatora, fresh cheeses and cured meats. Difficult, if not impossible, to put it through its paces.
