There is a lot, indeed a great deal, of Trentino in this Valdelac Cuvée Rosé. It is offered by Cavit, and this in itself could already be a guarantee. It comes from a processing of grapes typical of the territory. 65% Teroldego, indigenous to the Rotaliana plain, and 35% Schiava, which gives its best on the slopes of the Dolomites. Teroldego, harvested in the municipality of Mezzolombardo, grows on alluvial, shallow, loose and well-drained soil. Schiava, on the other hand, comes from vineyards located in Riva del Garda, between 300 and 500 metres above sea level. Processing begins with careful selection in the vineyard. Once in the cellar, the grapes undergo a very brief contact on the skins in the press before being crushed. This is followed by fermentation, at a controlled temperature, and an ageing phase in steel tanks, perfect for preserving fragrance and freshness. In the glass, one thus discovers a wine characterised by a beautiful soft pink colour, lively and brilliant. The bouquet is pleasantly fruity. In the mouth, then, one discovers a wine characterised by a light body, with good persistence and flavour. A particularly versatile wine, it is well suited both as an aperitif and to accompany pasta dishes, light main courses and unripened cheeses.
