Cantina Aldegheri's Bardolino DOC Chiaretto Tenuta Cariola belongs to its Classici line, good wines from the territory that have always been the strength of this fine Veronese winery. Tenuta Cariola is a wine full of character and liveliness, produced from grapes harvested on the morainic hills of the Veronese shore of Lake Garda. In particular, Corvina and Rondinella are used, in addition to other varieties recommended by the production regulations. The vineyards have an average age of 25 years and the vines are trained using the traditional Veronese pergoletta system. Upon arrival at the winery, the grapes are destemmed and crushed. The must and marc thus obtained are fermented in temperature-controlled tanks until complete extraction of aroma and colour, without further pressing. The result is a wine characterised by a beautiful bright ruby red colour, with fine, fruity aromas. In the mouth it is savoury and dry, harmonious on the whole. It is a fine young and fresh wine, perfect with soups and boiled meats. Definitely versatile, it requires, however, a pairing with dishes that are not too demanding.
