Lehmont, Pinot Noir Reserve of Kellerei St. Pauls, takes its name from the German terms "lehm", meaning loam, and "mont", meaning mountain. These terms refer to the moraine soils, with a mixed structure of silt and sand, where the estate's Pinot Noir vineyards have their roots. We are at an altitude between 400 and 500 metres above sea level, with a south-eastern exposure that guarantees perfect sunshine and constant ventilation. The mountain winds, in particular, contribute to the special microclimate, with cool nights that favour a slow and complete ripening of the grapes, enhancing the aromatic complexity of the wine. The vines are between 29 and 37 years old and are harvested by hand. In the cellar, an initial cold maceration is then carried out, followed by fermentation in steel tanks. This preserves the delicate, fruity aromas of the Pinot Noir. Subsequently, the wine is transferred to tonneaux and barriques, where it matures slowly for about 15 months. This long ageing in wood gives the wine a complex structure and aromatic depth, enriching the flavour profile with spicy notes and well-integrated tannins. Brilliant ruby red in colour, the nose reveals a complex and fascinating aroma, with notes of small red and dark berries, black cherry, plum and blood orange, accompanied by hints of dried meadow herbs and cloves. In the mouth, the wine reveals a good structure, with delicate tannins enveloping the palate and a firm, persistent finish. The balance of fruit, spice and minerality creates an unforgettable tasting experience. A versatile wine, it pairs well with meat and cheese dishes. It accompanies suckling lamb and saddle of venison, mature and piquant hard cheeses.

The production is mainly of white, dry and aromatic wines.
