Fallwind is the wind that characterises the growing area of Cantina San Michele Appiano, giving the wines aroma, freshness and longevity. The wind inspires the work of the winegrowers who harvest the grapes used to produce this interesting Alto Adige DOC Merlot Cabernet Fallwind Riserva. Composed of 55 per cent Merlot, 35 per cent Cabernet Sauvignon and the remainder Cabernet Franc, the grapes come from vineyards in Eppan, Kaltern and Kurtatsch, with southern, south-eastern exposure and gravelly, calcareous, moraine soils. The vines here are between 8 and 15 years old. Harvesting is done manually. The Merlot is harvested at the end of September, and the Cabernet a couple of weeks later, at the beginning of October. Vinification, with fermentation in temperature-controlled stainless steel, ends with a maturation of about a year in barriques and tonneaux. After blending, before bottling, the wine rests further in steel tanks. In the glass it has a beautiful, almost impenetrable dark red colour. The nose reveals clear notes of currant, mint, liquorice and coffee, while the palate is pleasantly soft and spicy. Powerful and expressive, it goes well with savoury dishes such as bistecca alla fiorentina or mature cheeses.

An enormous area, if one thinks of Alto Adige, but small in absolute terms. Especially when one considers the number of members in the winery. When it comes to vineyard management, a team of technicians and agronomists is constantly at each winegrower's side, offering valuable advice on how to manage their rows.
