This South Tyrolean Cabernet has an exuberant, almost euphoric character. It is a wine that hardly goes unnoticed on the table during a dinner with friends. It is, on the contrary, the bottle that ends up monopolizing everyone's attention. We are at about 350 metres above sea level, where the sun arrives directly to warm the roots for several hours every day. The vines have an average age of about 20 years and, after the harvest, the vinification process involves fermentation in open wooden vats and then maturation in used tonneaux for about a year on its fine lees. The result is a wine with character that is a beautiful dark ruby red colour. The nose is complex, with notes of cassis, white pepper, dried fruit and chocolate. In the mouth it is full-bodied, with well-structured tannins and a flavourful, lingering finish.
