We are in the area known as Languedoc-Roussillon, in the South of France and to be exact in Narbonne, the oldest Roman colony in Gaul, nicknamed 'the eldest daughter' of Rome outside Italy. It was here that Gérard Bertrand created this Côte des Roses, a fresh, young white from Chardonnay grapes. A simple but pleasant wine that is perfect on more than one occasion. The grapes, harvested when perfectly ripe, express their full aromatic potential. A meticulous sorting of the harvest is carried out, both during the harvest and when the grapes are received in the cellar, so as to be sure to eliminate any imperfect grapes. The grapes are then processed under inert gas to limit the oxidation of the must. The flower must obtained is then sent to the alcoholic fermentation phase, which continues for a minimum of 15 to more than 30 days, depending on the degree of clarification and the temperature applied. Part of the wine is then vinified and matured in barriques for about 4 months. While the rest of the mass is vinified in thermoregulated steel tanks to preserve the freshness and integrity of the aromas. Finally, after a slight clarification, the wine is immediately bottled, once again to preserve its fresh and fruity character. Pale in colour with slight golden hues, on the nose it is easy to discern aromas of mango, dried fruit, almond and hazelnut. Then citrus notes of grapefruit and orange blossom. On the palate, however, the barrique ageing brings aromas of vanilla, cinnamon, butter and spices. While the finish is characterised by a beautiful minerality and good length. A wine, as anticipated, super versatile, it lends itself well to aperitifs and full lunches. Excellent with delicate fish preparations, in particular, blue fish and tuna.
