Coste di Rose is a small Additional Geographical Mention in the commune of Barolo, on a steep slope that descends from the top of the Bosco della Fava down steeply to touch the border of Monforte d'Alba. The particular soil, and the perfect exposure, gives Barolo DOCG Coste di Rose its distinctive trait. We are at an altitude of about 380 metres above sea level, with south-east and south-west exposure, which guarantees perfect ripening of the grapes. The temperate climate, with cool breezes and significant temperature swings between day and night, then contributes to the development of complex aromas and a balanced tannic structure. Harvested by hand, alcoholic fermentation takes place in temperature-controlled stainless steel tanks for around 20-25 days, during which the must is regularly stirred to ensure good extraction of tannins and aromas. Then, after malolactic fermentation, the wine is transferred to oak barrels for ageing for at least 36 months. Finally, it undergoes a further period of bottle ageing, perfecting its harmony and balance. Intense ruby red in colour, with garnet reflections testifying to its good propensity for ageing, the nose offers elegant notes of red fruits, spices, undergrowth and liquorice. A complex and seductive bouquet that entices one to taste. In the mouth, it reveals itself to be structured and harmonious, with well-integrated tannins, good freshness and a persistent flavour. The long persistence and finesse of flavours make it a wine of great class, capable of evolving and improving over time. Perfect to enjoy with red meats, such as braised and roasted meats, and with mature cheeses that enhance its structure and complexity.
