Bricco delle Viole, the Barolo DOCG proposed here by Azienda Agricola G.D. Vajra, is produced from grapes harvested in the estate vineyards of Vergne di Barolo. We are in the heart of the Langhe, one of the most fascinating and prestigious wine regions in the world. Here the hilly terrain, characterised by clayey soils and calcareous marls, offers ideal conditions for the cultivation of Nebbiolo. The vineyards of Bricco delle Viole, in particular, are located at an altitude of 380 metres above sea level, with a south-east and south-west exposure that guarantees excellent sunshine and perfect ripening of the grapes. Production is careful and meticulous. After manual harvesting, the bunches are placed in vertical steel vats for alcoholic fermentation, which includes a long maceration on the skins of 30-40 days. Then, in spring, the wine spontaneously undergoes malolactic fermentation, which is essential to soften the tannins. Subsequently, the wine is transferred to large Slavonian oak barrels, where it ages for 42-48 months. Ageing then continues in the bottle, guaranteeing the maximum expression of Nebbiolo. Brilliant ruby red colour. On the nose, it offers a complex and seductive bouquet, with notes of cherry, violet and dried rose, enriched by a balsamic and spicy finish. In the mouth, it is elegant and balanced, with a solid structure and silky soft tannins. The long persistence and finesse of flavours make it a wine of great class, capable of evolving magnificently over time. Good today, it should undoubtedly be tasted within 10 years of the harvest. It goes well with red meats and mature cheeses. Ideal with braised Barolo, stewed wild boar and good local cheeses.
