Fermentation and maceration take place in stainless steel for about 25 days, at a controlled temperature, preserving the freshness and vivacity of the aromas. Malolactic fermentation follows, which softens the tannins and gives the wine a more harmonious profile. Ageing in 20-hectolitre French oak barrels for about 30 months then gives Oddero's Barolo Brunate DOCG complexity, elegance and a long capacity for evolution. A ruby colour that takes on garnet hues with ageing, the nose seduces with a bouquet reminiscent of roses, violets, wet earth and ripe red fruit. With age, tertiary hints of spices, liquorice, leather and truffle emerge, enhancing the aromatic complexity of the wine. In the mouth, monumental structure and refined elegance.
