  • Sensations The colour of the wine is ruby red with garnet highlights. The bouquet is clean and intense, with hints of vanilla, spices, dried rose and undergrowth. The flavour is dry, soft, full, velvety, harmonious and long lasting.
  • Vinification Vinification: fermentation is carried out, according to tradition, at a controlled temperature (30-31 °C) in stainless steel vats with a floating cap, for 15 days, with frequent pumping over to optimise the extraction of polyphenolic substances. Ageing: one year in Allier oak barriques and a further year in barrels of 2,000-3,000 litres. After a light clarification, the wine is bottled for further ageing, which varies according to the characteristics of the vintage, but is never less than 12 months.

  • Those who drink Barolo do not drink a simple wine. Rather, they drink the unique and inimitable fruit of a territory. And for this reason, there are those who prefer the wine from a certain municipality. Others prefer the typical version from another area. And there are those who seek complexity, choosing wines that are produced by blending the grapes of several distant vineyards. For this reason, special selections have been created within the denomination. And Fontanafredda, among others, was one of the first wineries to decide to make the most of the peculiarities of its terroir. Since 1988, in fact, they have been the first to produce this communal selection, an identity Barolo that represents the power of the Serralunga terroir and the elegance of the Fontanafredda style, floral, balsamic, vibrant and fresh. After vinification, this Barolo DOCG rests for 24 months in oak barrels and 12 months in cement. Only then is it ready to be bottled. A great red wine from the territory, capable of expressing its best characteristics right from the start but which also has the capacity to age, or rather mature and evolve, for a decidedly long time. Even 25/30 years, according to its producers. Today, in the glass, it has a beautiful ruby red colour with garnet highlights. The bouquet is clean and intense, with sweet sensations and hints of spices, dried rose and undergrowth. The taste is soft, full, velvety, harmonious and vibrant. A wine like this should not be uncorked if the occasion is not the right one and if there are no good traditional dishes on the table. Important first and second courses, as important as the wine, obviously based on red meat. But also medium-long aged cheeses and, for the sweet tooth, a little dried fruit and a sliver of chocolate. After all, a wine like this should not be drunk. It should be sipped, slowly, in order to grasp all the nuances of its broad bouquet.

    Founded by the first King of Italy in 1858. This inscription on the Fontanafredda website is enough to give a sense of a company that to define as "historic" is almost reductive. Fontanafredda was born out of a love story. It was in fact a gift from Vittorio Emanuele II to his beloved Rosa Vercellana, the famous "bella Rosina". Beyond this ante litteram gossip, however, Fontanafredda has always been a point of reference for regional and Italian viticulture in general. In fact, many curious records belong to this winery. The first vineyard in Barolo was purchased in 1866, and the first vinification took place in 1870. In 1886, Fontanafredda's Barolo wines reached America, and in 1887, the first cement tanks in Europe were built. Finally, 1959 saw the production of the first classic method sparkling wine, the forerunner of Alta Langa DOCG. The last step in the glorious history of this winery, after its acquisition by Oscar Farinetti and Luca Baffigo, is in 2018. Since that year, the company has been producing certified organic wines. Today, Fontanafredda, which exports to over 60 countries around the world, can count on a complex of 120 hectares of vineyards. And in its cellars there are over 2.5 million bottles of Barolo waiting to be put on the market. Long live... Fontanafredda!
