Trabocco Aureae Stellae, Pecorino Brut from Citra Vini, expresses the freshness and minerality of the prized native Abruzzo grape variety. The name Trabocco recalls the ancient fishing structures of Abruzzo that, with their roots in the Adriatic Sea, tell the story and culture of this land. This sparkling wine is made from grapes from Ortona, a town in the province of Chieti. Situated between the sea and the mountains, this area offers an ideal microclimate for wine-growing, with sea breezes and large temperature swings between day and night that allow the grapes to develop intense and complex aromas. Pecorino has regained popularity in recent years. Appreciated for its marked acidity and pleasant minerality, it is perfectly suited to the production of fresh sparkling wines. Vinification in white, with soft pressing of the grapes to keep the aromas and soft colour of Pecorino intact. After the first fermentation, the wine is transferred to an autoclave for frothing, according to the Charmat method. This phase lasts 15 to 20 days, with the use of selected yeasts to enhance the freshness and vivacity of the initial fruit. To the eye, this Brut has a pale yellow colour, enhanced by a fine and persistent grain of bubbles. The nose immediately reveals an intense bouquet, with balsamic notes of sage and thyme, which combine with delicate floral hints of broom and acacia. In the mouth it is fresh and full, with a well-balanced acid structure and a distinct minerality that lends depth to the sip. The pleasant effervescence enhances the aromatic persistence, making this sparkling wine a pleasant and enveloping experience. Versatile and refined, this Pecorino Brut is perfect as an aperitif, but also to accompany fish dishes, especially oysters and shellfish. It also goes well with medium-aged cheeses.

The headquarters, the imposing winery, is located in Ortona, in the province of Chieti. A few kilometres separate it from the sea. A few more from the foothills of the Apennines. But these numbers should not frighten. Although large, and Codice Citra really is, this winery has never lost the taste (and pleasure) of producing good wines. Deeply rooted in their territory of origin, they have been a point of reference for the region for 45 years.
