Château Fayat Pomerol 2016

In the heart of the prestigious Pomerol appellation in the Bordeaux region, Château Fayat is an estate that embodies French wine-making excellence and tradition. Created in 2009 from the merger of three historic properties, Prieurs de la Commanderie, La Commanderie de Mazeyres and Vieux Château Bourgneuf, Château Fayat covers 15 hectares divided into 31 plots, each with unique characteristics that contribute to the complexity of its wines. The Bordeaux Château Fayat, Merlot (90%) and Cabernet Franc (10%), is a typical blend. The Merlot brings smoothness and aromatic richness, while the Cabernet Franc contributes elegance and complexity. The vines are planted at a high density, with 9,000 plants per hectare, limiting the production per plant and concentrating the quality in the bunches. Vinification takes place in temperature-controlled stainless steel tanks. The wine is then aged for 12 months in French oak barriques, 50% of which are new and 50% are second passage. This balanced use of wood allows the wine's fruity characteristics to be enhanced without being overpowered by toasted notes. In the glass Château Fayat has a brilliant, intense red colour. On the nose it offers a complex bouquet of small red and black fruits, such as blueberry, blackcurrant and redcurrant. As it breathes, toasted and slightly smoky nuances emerge. In the mouth it is fleshy from the start, demonstrating power and elegance. The finely chiselled tannins support a perfect balance, leading to a persistent finish with delicate woody notes. Thanks to its beautiful structure, this wine has considerable ageing potential, evolving and improving for 15-20 years after the harvest. Château Fayat pairs well with meat-based dishes, such as a grilled beef fillet, a roast lamb with herbs or a selection of mature cheeses.
