Its effervescence is fine and persistent, creating a delicate play of bubbles in the glass. On the nose: the bouquet is complex and inviting. Notes of ripe citrus fruits, such as candied lemon and orange, open up, followed by hints of white-fleshed fruit, such as peach and pear. Nuances of toasted almond, brioche and fresh yeast add depth and richness, with a final touch of white flowers and a subtle mineral vein. Taste: On the palate, it surprises with its extraordinary elegance and complexity. Its acidity is lively but well balanced, bringing freshness and a harmonious structure.     • Vinification Annamaria Clementi is the fruit of the quest for excellence, both in the vineyard and in the cellar. In accordance with the Ca' del Bosco Method, the grapes, hand-picked in small crates, are promptly codified and cooled in cold rooms. Each bunch of grapes is selected by expert eyes and hands, to then benefit from our exclusive "bunch spa". A special system of washing and whirlpooling the bunches, using three soaking tubs and a system for complete drying. The base wines are obtained exclusively from first-pressing musts. Alcoholic fermentation takes place in small oak barrels made from selected woods and matured for at least 3 years. Here it remains on its lees for a further 6 months, also undergoing malolactic fermentation. No compromises, no concessions: only wine from the best barrels, from the 25 base wines of origin, is tapped to give rise to Annamaria Clementi. A pair of flying tanks transfers the base wines by gravity from the barriques to the blending tank. This is followed by bottling and a very long maturation in contact with the yeasts, which lasts for more than 8 years to make its unique profile: an absolute Franciacorta. Dégorgement takes place in the absence of oxygen, using a unique system invented and patented by Ca' del Bosco. This avoids oxidative shocks and further additions of sulphites and makes our Franciacortas purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked to guarantee traceability.
