  • Sensations Extraordinary complexity and elegance characterised by a distinct minerality and well-presented tannins. Bouquet: Wild berries with balsamic and mineral nuances.
  • Vinification After destemming, the must with skins and pips is started towards maceration and fermentation under strict thermodynamic control (22 to 26°C). Afterwards comes soft pressing and malolactic fermentation. The wine continues in stainless steel, on the fine lees, until the end of November. Afterwards, the wine is transferred to wooden barrels for ageing.

    Etna Rosso DOC 2021
  • It is made from grapes cultivated on the slopes of Sicily's Etna volcano. We are talking about Tenute dello Jato's Etna Rosso DOC, a structured red wine that well represents the strength and minerality of its land of origin. The Etna volcano, with its imposing presence, not only offers an enchanting natural panorama but, with its unique characteristics, has a decisive influence on the character of this wine. The vineyards here are located 800 metres above sea level and are rooted in mineral-rich soils. The climate here is cool and mountainous, with beneficial temperature fluctuations between day and night that contribute to the wine's elegance and aromatic complexity. Nerello Mascalese (70%) and Nerello Cappuccio (30%), these two indigenous grape varieties are perfectly adapted to the volcanic soil and climate conditions. Nerello Mascalese, in particular, gives the wine structure, body and tannins, while Nerello Cappuccio brings freshness, acidity and fruity notes. Vinification is carried out with respect for the grapes and begins with crushing and destemming. The must obtained remains in contact with the skins to acquire the right colour. Fermentation and soft pressing follow. The wine then undergoes what is known as malolactic fermentation and continues its maturation in steel, in contact with its fine lees until the end of November. It is then transferred to wooden barrels for the final stage of maturation. In the glass, one discovers a wine characterised by a beautiful intense ruby red colour with garnet hues. On the nose, a complex and elegant bouquet with aromas of berries, including blackberry, currant and blueberry, enriched by balsamic, mineral and spicy nuances. In the mouth, it conquers with its structure, harmony and beautiful persistence. The tannins, well present, are integrated and very fine.
